Soup for a Cold Day

I finally got around to trying the taco soup in the MGCC cookbook and blog. I don't know why it took me this long, but I have enjoyed it a number of times within a short time now. Last week Lovella and I each cooked a triple recipe for a large group. We let it simmer for several hours and served it with sour cream, cheese, fresh cilantro and shredded taco salad toppers.
I love the colors of the shredded tacos that Lovella brought. You can use your favorite toppings, make the soup spicier or not so spicy . . . but I'm pretty sure you'd like it too.
(oh and, if you follow in the book, don't be fooled into adding the taco chips, sour cream and cheese with the rest of the ingredients. It does only get added as garnish. Oops!)

That does look warm and comforting for a cold day! I'll have to check it out in the book too.

There's hardly enough days in January to try all the soups I love! Mexican Taco soup is a favorite over here.

I have made this soup several times, and it is a family favorite here! Very nice pic of the soup!

I've looked at the recipe but haven't tried it - this is the push I need. I try to make a pot of soup once a week - it gives us a supper and lunch for the next day. There's nothing nicer than homemade soup at the office.

I did not realize this taco soup was in your cookbook. I know my family will really like this and cannot wait to make it. I hope I can find the colorful tacos that Lovella had on top. That adds a pretty touch. Thanks for the reminder.
