Every once in a while I find myself where I have a good part of the day
to just be home and enjoy being in the kitchen.
On this particular day I was thinking ahead and realized that I'd need some quick meals
to pull out of the freezer in the weeks ahead.
Getting a batch of buns going is a no-brainer around here.
When there's buns, there's a possibility of a sandwich or accompaniment for soups and casseroles.
While the bun/bread dough is going through it's stages of rising, is a good time
to cook some dinners for the freezer.

I did a big recipe of rice and beans with an Italian sausage base. This I divided into four containers.
In the weeks ahead each container will be the base for a quick soup
by simply adding chicken broth and kale.

Meatballs are another great idea for future meals. When I take a bag out of the freezer, I cook them up with a mushroom or pasta sauce.
Once cooled, these two large meals can be divided into six meals.
.
Sometimes, when doing a batch of buns, I'll take a handful of the dough to stretch into a pizza pan.
I bake it until just a very light color, top it with jarred spaghetti sauce, chopped cold cuts, cheese and basil . . . then freeze it to bake another day.

Do you sometimes think of how you can make the most
of fresh bread or buns on the day you bake?
On a cooler day, fresh bread goes so well with a casserole or a pot of soup . . .
sometimes I can't resist pairing it up like that.
On this particular day I also found something sweet to add to the menu.
We enjoyed our comfort meal
and a few sweet slices with coffee - before the pan also went into the freezer.
I'll be posting these bars soon.
It's funny, the things that can make us feel like we've accomplished something.
Maybe it's finishing a craft, finally sending that parcel off or
writing a few cards . . . whatever it is . . .
in the end . . . aren't you always wondering why it took you so long?

These are all awesome ideas for the freezer... Can't wait for you to come and put them in mine ;)
What a timely post! I need to get on my freezer cooking in the next couple weeks. Thanks for the ideas!
Great to be prepared for those quick warm us up meals. It has already dropped temperature here with it just above freezing today. Brrr. Certainly is nice too, to be in a warm kitchen when all this is going on.

I can almost smell the delights from your kitchen. Those puttery days leave one feeling very productive, that's for sure.
P.S.
You lost me on the peas... . Is that Shipwreck?
And, I can't find the print button.

Sharon, If you click on the bolded "comfort meal" - it will take you to the recipe. Our family calls it brown dish casserole because that is the dish I always used.
Yummmmm everything looks so delicious! My only problem is that you started with the buns baking and I never make buns! Maybe that's my problem! :-)
I do love the idea of making up meals ahead of time and putting them into the freezer. Almost time to do that here again too.
Everything looks like it will be delicious!
Oh I'll bet your house smells wonderful! I love these kinds of days and you sure made good use of your "nesting" mood!
It all looks yummy over there! How nice to have meals ready at a moment's notice.
Excellent ideas - thanks for sharing!!

Well...that all looks delicious to me. Maybe we will all have to book you to come do a nesting day. I would make you coffee. =)
Autumn coolness makes kitchen time a real treat doesn't it? I roasted a turkey and made two gallons of turkey soup, using almost the entire bird in the soup. Working on building my winter soup "library"...so fun to have lots of soups to chose from frozen and ready to go or share. I used to have friends who also loved soups and by swapping our soups we used to have dozens of soups to chose from. Such fun!
I'm making bread today too. I like to have some freezer meals too but never thought of making a pizza and freezing it - it's a good idea!
And I like Jill's idea of soup swapping too!
That's so cute, the "Brown Dish Casserole". I believe our Shipwreck came from a Brownies and Girl Guides cookbook, that or early home economics classes cookbook.
I made the sausage/rice/everything else casserole today. There is LOTS. Also thinking about that soup exchange, but you know what? I don't know people who do that. Too bad for them. I do know a busy two executives working family with two and sometimes six children, so I'll be gifting.
I love this blog and MGCC. I can live vicariously, when really I've only got one to cook for. xxx

To one container of the rice and beans, mine with ground Bison, I added broth and sliced okra. It comes out tasting like this, which I loved many years ago and can't find anymore.

Sharon, again.
A true version of a Proverbs 31 woman is exactly what comes to my mind as I read this post. What an inspiration you are to people like me, who find it difficult to plan ahead. With my hot coffee sitting here beside me, those bars look so good!
