Mangoes range in color from green to red and yellow. They can be a combination of any or just plain, one color. The color doesn't always show how ripe it is, unless it is still a very obvious green color. When a mango is ripe, you should be able to indent it slightly by pressing on it. You should check for bruising and also make sure its not too soft, or you'll have a mushy mess to deal with.
For this photo shoot I happened to have a nice yellow mango. It's a bit smaller than the green variety, but is almost sure to be good!
To begin with, what you have to remember is that the mango has a large, kind of flat pit in the center. You will notice that in the same way the mango has opposing flatter sides. So here are the step by step directions on how to cut it, following the pictures.

- Stand the mango on its end and check out the shape to determine which way the pit is situated.
- Using a sharp knife, place it right beside the stem part, almost like you're going to cut it in half but, imagining the alignment of the flat side of the pit, you want to slice right beside it. Repeat on opposite side.
- Slice off the two narrow remaining sides
- Cut into wedges.
- Thinly peel each slice
- It's ready to put on a fruit platter or into a salad.

Now I know how I should be cutting up that mango!
We quite enjoy the same salad...spinach leaves with mango, strawberry or orange segments...a little crunch...and all coated in creamy poppyseed dressing. Yum.
very delicious and refreshing!
Perfect salad for a sunny day! I love the mango-cutting instructions. One question: when you lay the mango down, how do you know which are the 'flatter' sides? I guess if I actually had a mango in front of me it might be easier to determine this...

I think I like mango. Or is it papaya? I know there is one of the two I don't care for.
Mango is the best fruit ever! Can`t wait `till they are cheaper!
We enjoy mango a lot as well...and the salad is yummy! We haven't tried the dressing you mentioned, and so will check it out...thanks for the recommendation. Great for a summer lunch!
Remembering our mango jam experience ... LOL!
Oh I'll sure look for that dressing. . and your pictures absolutely made my mouth water. . well done.
It's salad time all right.
I love mangos and they are on sale at Superstore....
And poppy seed dressing. I have a very yummy home-made dressing that I will have to post some time if I ever get scheduled again.
Just wanted to say that I used these instructions today...and it worked perfectly!! YAY!
mmmm, that looks SO good... I'll have to try it. I think it would be nice with bits of feta cheese in the salad too... kind of like the California Salad at Milestone's... not sure if they still serve it there, but I ALWAYS ordered it.
I love mangos they are so good and I want to try this salad it looks dilious, I just want to say that peeling the mango before cutting it is much faster and easer then cutting after wards (no offence just a hint ).
Thank you, Helen... no offence.
I definetely would not peel it before cutting off the sides because the mango tends to be slippery once it's peeled. But then I ofen do peel the "half sides" before slicing them. That is probably what you meant.
